1 box vanilla cake mix (Duncan Hines or Betty Crocker)
135g AP flour
198g granulated sugar
1 cup whole milk (room temp)
510g sour cream (room temp)
1 stick unsalted butter (melted)
1/2 cup liquid egg whites (room temp)
1/2 cup rainbow jimmies sprinkles
2 cups (4 sticks) unsalted butter, softened to room temperature
1,000g confectioners' sugar
1/2 cup heavy whipping ream, room temp
4 tsp pure vanilla extract
salt, to taste (I use 1 full tsp)
Preheat oven to 350F. Line cupcake pans with liners. Using a whisk attachment in an electric mixer, mix all ingredients except sprinkles together on med-high until smooth, about 3 minutes. Fold in sprinkles. Scoop into cupcake liners about 2/3 way full and bake for 20-22 mins or until centers spring back when touched. Let cool completely before frosting.
Beat butter in stand mixer fitted with paddle attachment on med-high until light in color & fluffy, about 7 minutes. Add remaining ingredients. Mix on low until incorporated then scrape and increase speed to med-high for 2 mins. Taste and add more salt or vanilla if needed. Stir on lowest speed for 5-10 minutes to remove air bubbles.
On a large, rectangular serving tray or cake board, set out 25 cupcakes in an easter basket shape: a row of three, then four, then five cupcakes to form the basket, then another row of five cupcakes as the start of the handles and to form the grassy area/hold the bunnies, then 8 around in a semi-circle to form the handle, with negative space below.
You will need white buttercream (or another desired color) to form the basket weave and handle, green for the grass, and whatever colors you choose to add flowers.
Begin by piping the basketweave across the bottom three rows of cupcakes using tip T04. Start with a vertical line, then cross over in even sections short horizontal lines, and repeat alternating spaces.
Next pipe the handle using T07 to make a rope border in a tall semi-circle shape.
Then use a small open star tip like K45 to make a scalloped border around the bottom of the basket to give it a tidy appearance.
Next pipe grass in the center three exposed cupcakes using tip K49. Add marshmallow or chocolate bunnies, jelly beans, or other candies to the grassy area.
Finally, add flowers however you'd like. I used Russian tips S2 and S11 to add yellow, orange, purple and pink florals all around. Finish with edible glitter or any other sprinkles you desire!
