Back to School Lunchbox Cakes – Uniquely designed treats to spark joy in the new semester. Share the delight with friends, making lunch a mini celebration!
2 and 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
3/4 cup softened butter
1 and 3/4 cups sugar
5 large egg whites
1/2 cup sour cream
1 Tablespoon vanilla extract
1 cup whole milk
Preheat the oven to 350°F
Grease 3 6” pans
Sift the flour, baking powder, baking soda, salt, cinnamon and nutmeg together. Set aside.
In a mixer beat the butter on high until smooth
Add the sugar and beat until combined.
Add the egg whites. Beat on high speed until combined, scrape down sides as needed.
Add the sour cream and vanilla extract.
Ads dry ingredients until just incorporated.
On low speed slowly add in the milk until combined. Do not overmix.
Stir in sprinkles.
Divide batter equally into pans.
Bake for 25 minutes
Cool completely before frosting
Instructions for frosting
Beat butter until smooth
Add salt and vanilla extract. Mix.
Add one cup of powdered sugar at a time, mixing well in between.
Add heavy cream and mix on high for 5 minutes until smooth and fluffy.
Divide frosting into 5 bowls. Leave one white and color the others red, yellow, blue and green.
Decorating
When cakes are completely cooled, frost with white frosting and smooth the top.
Prepare 4 piping bags with each of your colors.
Get the piping tips you want to use. (I used Kootek piping tips numbers K36, K04, K47, K01, K68, and K13)
Pipe lines to make it look like notebook paper. You can also do other designs, borders, ruffles etc. onto each cake. The design is up to you, have fun and try different things to get the look you want!
I also used fun alphabet sprinkles and various colored sprinkles to get back to school themed looks.
Put lids in each cake, tie with a fun ribbon and add a spoon
These make perfect little cakes to add to your kids lunch boxes!
