This Funfetti Cake features a moist vanilla base with rainbow sprinkles and is topped with American Popsicle Buttercream. Assembly involves chilling the cake layers, applying a crumb coat, and decorating with colored buttercream to create popsicle designs using piping tips. Finally, add sprinkles for a festive touch. Perfect for celebrations!
Piping tips you will need:
1 box vanilla cake mix (Duncan Hines or Betty Crocker)
135g AP flour
198g granulated sugar
1 cup whole milk (room temp)
510g sour cream (room temp)
1 stick unsalted butter (melted)
1/2 cup liquid egg whites (room temp)
1/2 cup rainbow jimmies sprinkles (or, red white & blue sprinkles!)
2 cups (4 sticks) unsalted butter, softened to room temperature
1,000g confectioners' sugar
1/2 cup heavy whipping ream, room temp
4 tsp pure vanilla extract
salt, to taste (I use 1 full tsp)
Preheat oven to 350F or 325F Convection. Spray and flour 3 6 inch cake pans. Using a whisk attachment in an electric mixer, mix all ingredients except sprinkles together on med-high until smooth, about 3 minutes. Fold in sprinkles. Pour evenly into prepared pans and bake for approximately 40-45 mins or until centers spring back when touched. Let cool completely before frosting.
Beat butter in stand mixer fitted with paddle attachment on med-high until light in color & fluffy, about 7 minutes. Add remaining ingredients. Mix on low until incorporated then scrape and increase speed to med-high for 2 mins. Taste and add more salt or vanilla if needed. Stir on lowest speed for 5-10 minutes to remove air bubbles.
Working with chilled cake layers, stack and crumb coat the cake and put in the fridge for 20 minutes. While the cake is chilling, color your light blue base buttercream. Final coat and smooth the cake, and place back in the fridge.
While the cake is chilling, prepare your piping bags and color the buttercream. You will need open star tips K16 or K47 each in red, white & blue for the rocket pop design, and K52 colored light brown for the popsicle stick. I used T15 filled with red, white and blue buttercream for the border.
Cut a piece of parchment paper in the size of the popsicle shapes you would like to fit on the cake. Mine was about 2x3.5 inches. Once the cake is fully chilled, trace out the shapes using the parchment cut out and a toothpick so they are playfully spaced around the cake.
Begin piping the popsicles in even rows, blue at the bottom, white in the middle, and red on top. Add the stick using the flat side of K52.
Use the tri-color coupler to place 3 colors in a piping bag fitted with a large tip like T15 for the shell border and swirls on top.
Apply sprinkles, and celebrate!
