Create a Minions-themed dessert masterpiece! This recipe guides you through baking a giant banana cake and a dozen cupcakes, then decorating them with fondant and buttercream to look like Minions and a banana. Perfect for parties and fun to make!

Total time: 2h 35 minutes (not including cooling time)
Makes 1 giant banana cake (feeds 10) and 1 dozen cupcakes
1 and 1/2 cups (345g) mashed bananas (about 4 medium or 3 large bananas)
3 cups (375g) all-purpose flour (spooned & leveled)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar
1/2 cup (100g) packed light or dark brown sugar
3 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 and 1/2 cups (360ml) buttermilk, at room temperature
8 ounces (226g) full-fat brick cream cheese, softened to room temperature
1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
3 cups (360g) confectioners’ sugar, plus an extra 1/4 cup if needed
1 teaspoon pure vanilla extract
1 teaspoon salt or salt to taste

First, prep a 9x13 pan with baking spray, and insert cupcake liners in cupcake trays. Preheat oven to 325F Convection or 350F.
Whisk the dry ingredients together and set aside. Mash the bananas and set aside. Cream butter and sugar for 5 minutes, then add in eggs and vanilla, scrape and mix for two minutes. Mix in dry ingredients, then bananas and buttermilk until just combined. Scoop out 12 cupcakes, then pour the remaining batter into the 9x13 pan. Bake cupcakes for 20 minutes and cake for about 30 minutes or until a toothpick comes out clean. Let cool completely before decorating.
Cream the butter and cream cheese together for 5 minutes. Add in remaining ingredients, cream for 2 minutes.
Use a 3 inch round cutter, and a 2.75 inch round cutter, cut circles out of the banana cake. Stack on their side on the cake board, and fill in frosting in between each circle, to form a curved banana shape. Set in fridge for 20 minutes. Using a serrated knife, carve the banana cake to create the flat edges, resembling a real banana. Crumb coat this with buttercream, then set in the fridge for another 20 minutes.
Roll out a large piece of yellow fondant, and cover the banana cake. Use a fondant smoother to smooth along the edges you carved. Cut the fondant along the cake board as neat as you can. Add any little brown spots or details you'd like. Don't forget to form the stem using a fondant-covered toothpick or small dowel. Add banana sprinkles and minion characters if you'd like!
To make the minion cupcakes, dye the rest of the frosting yellow. Use round tip K41 to pipe a flat, neat swirl on each cupcake. Add a black strap of buttercream using tip K52, or black fondant, and the large candy eyeballs.
