buttercream
Prep your cake; you will need either two to three cake layers. I chose a pumpkin spice cake with cream cheese frosting, but you can use any cake you prefer. You will then need to stack, fill, and crumbcoat your cakes. Allow it to chill until your crumb coat is completely set.
Frost your cake in blue buttercream and smooth it using the Kootek offset spatula and cake scraper. Allow to chill.
Fit a piping bag with a Kootek coupler and fill it with frosting. Repeat for all desired colors of frosting. (Red, yellow, blue, burgundy, orange, brown, black, green, white, etc.)
Now you are ready to decorate! Begin by piping a ruffle feathered pattern of red buttercream in a half moon or circle shape on the front side of the cake using a T02 piping tip. This will be your first layer of feathers for your turkey. I like to allow my frosting about five minutes to chill in the freezer before repeating with my orange and yellow feather frosting layers. For the orange feathers I use a K32 and for the yellow feathers I used a K02.
Fill in the center of the turkey with a swirl of brown using the piping tip K05. Chill, then pipe the turkey’s head and neck using a K11 piping tip. Smooth as desired then chill.
Add his beak, snood ( the red dangling bit off of the beak) and his eye.
Using a Kootek piping tip T04 pipe a consecutive circle around the top edge of the cake to create your wreath.
While the cake chills create your Autumnal flowers and foliage on small piece of parchment adhered to a floral nail with a small amount of buttercream. Once you have piped your flower onto your parchment paper, place the frosting flower in the freezer for easy transfer later.
■ Tips I used for my flowers and leaves: K02, K10, K51, K20, K43
■ Feel free to take inspiration from the example, but don't worry about copying exactly what I chose to do, have fun experimenting with different designs and ideas until you are happy with it!
Once your flowers are piped and frozen carefully transfer them from the parchment papers onto your wreath. Then fill in gaps and adorn with leaves using K20 and K43 piping tips.
Continue your design down the sides of the cake by piping vines and leaves trailing down. Then use a piping tip K12 to create some fun pumpkins as well.
Once satisfied with your Fall foliage use a K01 piping tip to pipe a thankful message on top such as, “Give Thanks” or “Happy Thanksgiving!”
Finally make sure to take lots of pictures of your awesome cake, share it with us. Enjoy your fabulous creation by sharing it with loved ones!
