Supplies Needed:
● Cake
● Frosting
● Food coloring
● Kootek turntable
● Kootek cake scraper
● Kootek offset spatula
● Kootek Piping tips: K53, K61, K09, K41, K16, K04, K01, K11, K13, K55, K36, K49, K20, K49, K22, K23, K28, etc.
● Piping bags
● Kootek piping couplers
Fondant Toppers:
○ Red, white, yellow, blue, and black fondant
○ Cookie sheet lined with Parchment paper to place your drying toppers on.
○ Lolliepop sticks
○ Elastic thread
○ Water
○ Small paint brush
○ Cornstarch
○ Fondant Roller
○ Knife
○ Star cutter
Buttercream
Frost your cake in blue buttercream and smooth it using the Kootek offset spatula and cake scraper. Allow to chill.
Fit a piping bag with a Kootek coupler and fill it with frosting. Repeat for all desired colors of frosting. (Red, yellow, blue, pink, brown, black, green, white, etc.)
Now you are ready to decorate! Begin by piping equal swoops of red buttercream on the top third of the cake sides using a K53 piping tip. Then pipe a second ruffle on top of each swoop using a K13 piping tip.
■ PRO TIPS: Before starting to pipe your swoops gently make a small indentation on the chilled cake marking where to begin and end
each swoop. This will ensure each is even. I like to use a ruler and circle cutter for even more precious demarcations.
■ Add a little wiggle while you pipe to create a beautiful ruffle to the piping.
■ As you pipe ensure the buttercream is secured to the chilled cake, if not it will slide right off. But don’t worry if this happens; scrap it off and try again! You got this!
Next, using a K09 piping tip, pipe small bursts of pressure on the top edge.
Then use a K01 or K41 with yellow buttercream to create large yellow circles at the meeting point of each red swoop.
Now have fun piping your favorite things you would find at a carnival on the bottom two thirds of cake sides!
■ Popcorn- Created with a K01 for the white and red bucket and K61 for the popcorn pieces.
■ Balloons- Created with a K01 for the black line strings and white accents. A K01, K21, K42 or K41 for the attached balloons.
■ Cotton Candy- Created with K01 for the brown sticks and K16 and K36 to create the cotton candy.
For the Fondant Toppers:
a. Begin by cutting out stars in different sizes.(about 20-30 stars)
b. Next cut out a 2D circus tent; a rectangle with a triangle on top, out of white fondant and a smaller black one, this will be the door to the tent.
■ Pro Tip: I like to have a couple reference pictures and screenshots near me when I work in case I need to reference them or inspiration for my own creations.
c. Carefully place red stripes on to the white fondant, securing with a small amount of water. Place additional read pieces around the black door for curtains and across where the triangle meets the rectangle shape of the tent. Set aside to dry completely.
■ Once dry, attach two lollipop sticks to the back by wrapping them in fondants, securing with water, and allowing them to dry completely.
d. Wrap a thin rope of yellow fondant around three individual lollipop sticks, secure a red ball of fondant to each top, and allow it to dry completely.
e. Cut out ten equal sized blue triangles to use for our banner. Carefully add two holes to each triangle near two points. These holes will be used to string the banner on. Allow to dry completely.
■ Once dry, thread elastic thread through each of the banner triangles and secure a string of 5 between two lollipopsticks. Repeat with the
remaining 5.
Carefully add the fondant toppers to the cake!
a. Remember! Don't worry about perfection, focus on having fun and being creative when decorating!
