1 cup (16 TBSP, 226g) unsalted butter, softened to room temperature
3.5 cups (420g) confectioners' sugar
1/2 cup (41g) unsweetened natural cocoa powder
3-5 TBSP heavy whipping cream, at room temperature
1/2 tsp salt (or to taste)
2 teaspoons pure vanilla extract
In a stand mixer with paddle attachment, beat the butter on medium high speed until creamy, about 5-7 minutes. Add remaining ingredients. Mix on low speed for 30 seconds then increase to high speed and beat for a full minute. Add 1/4 cup confectioners' sugar if the frosting is too thin, or another TBSP of cream if the frosting is too thick. Taste. Add more salt if needed and beat again.
Use Immediately or cover tightly and store for up to one week in the refrigerator or up to 3 months in the freezer. After refrigerating or freezing, bring buttercream to room temperature and beat with the paddle attachment. Add more cream if needed.
To remove air bubbles from buttercream, mix on lowest setting for 10-20 minutes.
