ASSEMBLE AND DECORATE CUPCAKES CAKE:
I suggest using Kootek's cupcake display stands to display your beautiful cupcakes. They are easy to assemble in 5 minutes! Once assembled, decorate your cupcakes.
Note: I used the following additional toppers/supplies to decorate my cupcakes after applying buttercream, but feel free to make them your own! Candy eyeballs & edible markers for the friendship bracelets, assorted sprinkles and edible glitter, Taylor Swift cupcake toppers, small disco balls, butterfly cupcake toppers.
I used the following piping tips to decorate one big swirl of frosting, starting on the outside of the cupcake and swirling inwards, almost like a frosting dress!
Red buttercream: T07
Orange buttercream: T15
Purple buttercream: K53
Blue buttercream: K41
You can combine pink, blue and purple into one bag and use a large open star to pipe swirls and drop flowers. I also added some white ruffles using a petal tip.
For the flat top cupcake design - pipe a blob of blue in the center of the cupcake and flip upside down and squish into parchment paper. Freeze for 20 minutes and remove to reveal the flat top!
Once decorated, carefully place your cupcakes on the display stands for all to see and enjoy.
1 box vanilla cake mix (Duncan Hines or Betty Crocker)
135g AP flour
198g granulated sugar
1 cup whole milk (room temp)
510g sour cream (room temp)
1 stick unsalted butter (melted)
1/2 cup liquid egg whites (room temp)
1 cup mini semi-sweet chocolate chips
2 cups (4 sticks) unsalted butter, softened to room temperature
1,000g confectioners' sugar
1/2 cup heavy whipping cream, room temp
4 tsp pure vanilla extract
salt, to taste (I use 1 full tsp)
Preheat oven to 350F. Line cupcake pans with liners. Using a whisk attachment in an electric mixer, mix all ingredients except chocolate chips together on med-high until smooth, about 3 minutes. Fold in chocolate chips. Scoop into cupcake liners about 2/3 way full and bake for 20-22 mins or until centers spring back when touched. Let cool completely before frosting.
Beat butter in stand mixer fitted with paddle attachment on med-high until light in color & fluffy, about 7 minutes. Add remaining ingredients. Mix on low until incorporated then scrape and increase speed to med-high for 2 mins. Taste and add more salt or vanilla if needed. Stir on lowest speed for 5-10 minutes to remove air bubbles.
